Instructions

  1. In a large mixing bowl, combine the oats, pumpkin puree, and nut butter.
  2. Add the honey or maple syrup, pumpkin spice, and vanilla extract.
  3. Mix thoroughly until the ingredients are well combined.
  4. If using, fold in the chocolate chips until evenly dispersed.
  5. Using your hands, roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Once chilled, transfer the energy bites to an airtight container and enjoy!
