  • 1 box of pumpkin spice cake mix
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • Pinch of cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine the pumpkin spice cake mix, pumpkin puree, water, vegetable oil, and eggs. Mix until well combined.
  3. Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted comes out clean with a few moist crumbs.
  4. While the cake is baking, beat the cream cheese and butter together until creamy. Gradually add the powdered sugar and brown sugar, mixing until well incorporated. Add vanilla extract and a pinch of cinnamon, and blend until smooth.
  5. Once the cake has cooled for about 10 minutes, spread the brown sugar cream cheese frosting generously over the top.
  6. Allow the cake to set in the refrigerator for at least 30 minutes before slicing to help the frosting firm up a bit.

Notes

Store leftover cake in the refrigerator for up to 5 days in an airtight container. You can also freeze individual slices for up to 3 months.
