Ingredients

  • 1 cup brown sugar (packed)
  • 1 cup sugar (granulated)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats (preferably old-fashioned)
  • 2 cups flour (all-purpose)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for filling)
  • 1/4 cup cream cheese (softened)
  • 1 tablespoon milk (or as needed for consistency)
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the rolled oats, flour, baking soda, baking powder, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet mixture, combining until just mixed.
  6. Drop spoonfuls of dough onto a prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are lightly golden.
  7. While cookies cool, in another bowl, mix together the powdered sugar, cream cheese, and milk until smooth. Adjust milk for desired consistency.
