  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, salt, and pumpkin pie spice; set aside.
  3. In a separate bowl, beat softened butter and sugar together until light and fluffy.
  4. Mix in the egg, vanilla extract, and pumpkin puree until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Using a cookie scoop, drop tablespoons of dough onto a parchment-lined baking sheet.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
