  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup granulated sugar
  • ยฝ cup unsalted butter, softened
  • 1 large egg
  • 2 ยฝ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ยฝ tsp salt
  • 1 tsp ground cinnamon
  • ยฝ tsp ground nutmeg
  • ยฝ tsp vanilla extract

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg, pumpkin puree, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Using a cookie scoop or tablespoon, drop dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  6. Bake for 12-15 minutes or until edges are lightly golden. Centers will firm up as they cool.
  7. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
