Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a mixing bowl, mash the ripe bananas until smooth, then mix in the melted butter.
  3. Add in the baking soda, salt, sugar, egg, and vanilla extract. Stir until well combined.
  4. Gently fold in the all-purpose flour until just combined—don’t over-mix!
  5. Distribute the batter evenly into the prepared muffin cups, filling about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring to a wire rack. Enjoy warm or at room temperature!

Notes
