Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups Rice Krispies
  • 1 cup chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract, mixing well.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until combined.
  5. Gently fold in the Rice Krispies and chocolate chips until evenly distributed.
  6. Use a cookie scoop or spoon to drop balls of dough onto the prepared baking sheet, spacing them about two inches apart.
  7. Bake for 12-15 minutes or until the edges are lightly golden. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to one week or freeze for longer freshness. Warm in microwave for 10-15 seconds to regain chewy texture.
