Ingredients

  • 23 tablespoons Maple Syrup
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then cut them into 1-inch cubes.
  3. In a large bowl, combine the sweet potato cubes, olive oil, maple syrup, salt, and black pepper; toss until well-coated.
  4. Spread the sweet potato mixture on a lined baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, tossing halfway for even browning.
  6. Check for doneness; they should be tender and caramelized.
