Ingredients

  • 1 ready-made graham cracker crust
  • 1 cup root beer
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 cup whipped cream
  • 1/2 cup sugar

Instructions

  1. If using a store-bought graham cracker crust, set it aside. If making from scratch, crush 10 graham crackers and mix with 1/4 cup melted butter. Press into the bottom and sides of a pie dish, and chill.
  2. In a mixing bowl, beat 8 ounces of softened cream cheese until smooth.
  3. Gradually mix in 1 cup of root beer and 1 teaspoon of vanilla extract until well combined.
  4. Add in 1/2 cup of sugar and adjust sweetness to taste.
  5. Gently fold in 1 cup of whipped cream until fluffy.
  6. Pour the filling into the chilled graham cracker crust, smooth the top, and cover with additional whipped cream if desired.
  7. Refrigerate for at least 4 hours, or until set, then slice and serve.

Notes

Best served cold. Can be made ahead of time and stored in the fridge for up to 5 days.
