Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy and well-combined.
  3. Mix in the eggs, one at a time, followed by the vanilla extract, until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  5. Fold in the rolled oats and about 3/4 cup of the salted caramel sauce, ensuring an even distribution.
  6. Use a cookie scoop or spoon to drop cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Drizzle the remaining salted caramel sauce over the cookies and sprinkle a pinch of sea salt on top.
  8. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
