  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 3 cups old-fashioned oats
  • 1 cup toffee bits
  • 12 teaspoons flaky sea salt for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs, one at a time, followed by the vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Fold in the oats and toffee bits until evenly distributed.
  6. Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheets about 2 inches apart. Sprinkle a tiny pinch of flaky sea salt on top of each cookie.
  7. Bake for 10-12 minutes or until the edges are golden and the centers are set. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Store in an airtight container to maintain freshness.
