This delightful dessert combines the flavors of caramel, shredded coconut, and chocolate into one fabulous pie, reminiscent of Samoas Girl Scout Cookies.

Ingredients

  • 1/2 cup unsalted butter (1 stick, melted)
  • 1 large egg
  • 1/2 cup light brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips (for sprinkling)
  • 1 1/2 cups sweetened shredded coconut (loose)
  • Two-thirds of one 14-ounce can sweetened condensed milk (about 10 ounces)
  • 4 to 5 ounces salted caramel sauce
  • 3/4 cup semi-sweet chocolate chips (melted for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C). Generously spray a 9-inch pie dish with cooking spray and set aside.
  2. In a large microwave-safe bowl, melt the butter in the microwave, which will take about 1 minute on high power.
  3. Allow the melted butter to cool slightly before adding the egg. Whisk in the egg, brown sugar, and vanilla extract until smooth.
  4. Stir in the flour and salt until just combined; do not overmix.
  5. Pour the batter into the prepared pie dish, smoothing the top. Bake for about 10 to 12 minutes until the edges begin to firm and the center is slightly set.
  6. Remove the pie from the oven and sprinkle 3/4 cup of chocolate chips over the crust, then layer the shredded coconut on top. Drizzle the sweetened condensed milk and salted caramel sauce over the pie.
  7. Return the pie to the oven and bake for an additional 25 minutes, until bubbling near the edges and the center is more set.
  8. Allow the pie to cool in the dish on a wire rack. Meanwhile, melt the reserved 3/4 cup of chocolate chips and drizzle over the pie.
  9. Let the pie cool for at least 4 hours before slicing to ensure the filling sets properly.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. This pie can also be frozen for up to 2 months.
