Ingredients

  • 8 large eggs
  • 1 lb breakfast sausage
  • 8 small flour tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, crumble the breakfast sausage and cook for about 8-10 minutes until browned and cooked through.
  2. While the sausage is cooking, crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.
  3. Once the sausage is cooked, push it to the side of the skillet and pour the whisked eggs into the pan. Stir gently until the eggs are just set, around 3-5 minutes.
  4. Gently fold the cooked sausage into the eggs, adding in the shredded cheese until everything is well incorporated.
  5. In another pan or microwave, warm the tortillas for about 10-15 seconds to make them pliable.
  6. Place a generous portion of the sausage-egg-cheese mixture onto the center of each tortilla. Roll tightly, folding in the edges to seal the filling inside.
  7. For an extra crispy finish, place the rolled-up tortillas seam-side down in the skillet for a minute or two until golden brown.
