Ingredients

  • 8 oz pasta (such as penne or fusilli)
  • 1 lb Italian sausage (sweet or spicy)
  • 2 cups fresh spinach
  • 1 can (14.5 oz) diced tomatoes
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot. Add a pinch of salt and stir in the pasta. Cook according to package directions until al dente (about 8-10 minutes), then drain, reserving a bit of the starchy water.
  2. In a skillet over medium heat, heat the olive oil and add the Italian sausage. Break it apart with a spoon and sautรฉ for about 5-7 minutes until browned and cooked through.
  3. Add the minced garlic to the skillet and sautรฉ for an additional 2 minutes.
  4. Stir in the diced tomatoes (with juices) and fresh spinach. Let it simmer for 5-7 minutes until the spinach wilts and flavors meld.
  5. Add the drained pasta to the skillet, tossing everything together. If the sauce is too thick, add reserved pasta water. Season to taste with salt and pepper.
  6. Serve hot, optionally garnished with grated Parmesan cheese and fresh basil.

Notes

Parmesan cheese and basil are great garnishes. You can also consider topping with toasted breadcrumbs for extra crunch.
