  • 1 pound sausage (your choice, such as Italian or turkey)
  • 3 medium sweet potatoes, peeled and diced
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil (optional, for roasting)
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, add the sausage links whole or sliced. Sear for about 4-5 minutes until golden brown, turning occasionally.
  2. Add the sliced onions to the skillet and cook for 3-4 minutes until they soften and become translucent.
  3. Stir the diced sweet potatoes into the mix, coating them with the sausage drippings. Cook for another 5 minutes.
  4. Sprinkle in the minced garlic, followed by the honey and soy sauce. Stir well to coat everything and allow it to bubble gently for about 2 minutes.
  5. Lower the heat and cover the skillet. Let it simmer for 20-25 minutes until the sweet potatoes are tender, stirring every few minutes.
  6. Once the sweet potatoes are fork-tender, taste and season with salt and pepper. Serve warm.
