1 lb breakfast sausage
6 large eggs
1/4 cup milk
Salt and pepper to taste
4 large flour tortillas
1 cup shredded cheese (optional)

Instructions
In a large skillet over medium heat, cook the breakfast sausage, breaking it apart as it cooks, for about 5-7 minutes until browned and fully cooked.
While the sausage cooks, whisk together the eggs and milk in a bowl until smooth, adding a pinch of salt and pepper.
Once the sausage is cooked, lower the heat slightly and pour the egg mixture into the skillet, stirring gently for 4-5 minutes until the eggs are soft and creamy.
Lightly warm each tortilla in a separate skillet or over an open flame for about 30 seconds on each side.
Spoon a generous portion of the sausage and egg mixture onto each warmed tortilla, adding cheese if desired. Fold in the sides and roll tightly to create the burrito.
Serve the burritos with salsa or hot sauce.
