Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, add the chopped spinach and a pinch of salt; let sit for about 5 minutes.
  3. Add the crumbled feta, flour, and minced garlic to the bowl. Pour in the eggs and mix until well combined.
  4. Line a baking sheet with parchment paper. Scoop portions of the mixture and flatten into discs on the parchment.
  5. Drizzle olive oil over each crisp. Bake for 15-20 minutes until golden brown.
  6. Allow to cool for 5 minutes on the baking sheet before transferring to a wire rack.
  7. Serve warm or at room temperature.
