Ingredients

Scale
  • 4 medium-sized Yukon gold or russet potatoes, thinly sliced
  • 1 medium onion, finely chopped
  • 2 cups heavy cream
  • 2 cups shredded cheese (cheddar, Gruyère, or your favorite blend)
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • Cooking spray

Instructions

  1. Lightly spray the inside of your slow cooker with cooking spray.
  2. Layer sliced potatoes, chopped onions, garlic, cheese, salt, and pepper in the slow cooker, repeating until all ingredients are used, finishing with a cheese layer on top.
  3. Pour heavy cream evenly over the layered ingredients.
  4. Sprinkle dried thyme on top.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until potatoes are tender.
  6. Gently stir before serving and let cool for a few minutes.

Notes

Feel free to customize with different herbs and cheeses. Store leftovers in an airtight container for up to 3 days.
