  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1 cup caramel candies, unwrapped
  • 1 cup pecans, chopped
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and powdered sugar in a large mixing bowl until light and fluffy.
  3. Gradually mix in the flour and vanilla extract until the dough forms a smooth ball.
  4. Press the dough into the prepared baking sheet evenly, about 1/4 inch thick, and bake for 15-20 minutes until the edges are lightly golden.
  5. While the cookies bake, melt the caramel candies in a microwave-safe bowl, stirring every 30 seconds until smooth.
  6. Immediately after removing the cookies from the oven, pour the melted caramel over the warm shortbread and sprinkle with chopped pecans. Let it cool for about 10 minutes.
  7. Melt the chocolate chips in the microwave and drizzle over the cooled cookies. Allow the chocolate to set before cutting into squares.

Notes

For a variation, try using different nuts or adding a dash of sea salt over the chocolate topping.
