Ingredients

  • 2 lbs chicken breasts (boneless, skinless)
  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cans (15 oz) white beans
  • 1 can (15 oz) diced tomatoes
  • 1 cup buffalo sauce
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper (to taste)

Instructions

  1. Chop the onion and mince the garlic.
  2. Place the chicken, onion, garlic, white beans, diced tomatoes, buffalo sauce, and chicken broth in your slow cooker and stir well to combine.
  3. Add paprika, cumin, salt, and pepper; stir to coat evenly.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, remove the chicken and shred it, then return it to the chili.
  6. Taste and adjust seasoning as needed. Serve in bowls and garnish with chopped chives or cilantro.

Notes

This chili gets better as leftovers! Feel free to customize with your favorite beans or vegetables.
