Ingredients

  • 2 pounds beef chuck roast
  • 1 pound baby Yukon gold potatoes
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 2 cups beef broth
  • 1 tablespoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Wash and cut baby Yukon gold potatoes in half for even cooking.
  2. Season the beef chuck roast generously with salt and pepper.
  3. Place the beef roast at the bottom of the slow cooker and layer the halved potatoes around it.
  4. Melt the unsalted butter in a small saucepan and stir in minced garlic and dried thyme.
  5. Pour the garlic butter mixture over the beef and potatoes, then add beef broth.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Once done, serve hot, garnished with fresh herbs if desired.

Notes

Feel free to substitute beef with chicken thighs or add additional vegetables for variation.
