Ingredients

  • 2 pounds Chicken Thighs
  • 1/2 cup Lemon Juice
  • 2 sprigs Fresh Rosemary
  • 2 sprigs Fresh Thyme
  • 4 cloves Garlic, minced
  • 1 cup Chicken Broth
  • Salt and Pepper, to taste
  • 1 cup White Rice, rinsed

Instructions

  1. Grease the inside of your slow cooker.
  2. In a bowl, combine chicken thighs with lemon juice, garlic, salt, and pepper. Marinate for 5 minutes.
  3. Layer marinated chicken in the slow cooker. Sprinkle with rosemary and thyme, then pour chicken broth around.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. 30 minutes before cooking time is up, add rinsed rice to the slow cooker.
  6. Check for doneness; chicken should reach 165°F (75°C).
  7. Serve over fluffy rice with cooking liquid.

Notes

For a kid-friendly version, reduce garlic and lemon juice. Engage kids in the cooking process for better acceptance.
