Ingredients

Scale
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional extras: Chocolate chips, nuts, or dried fruits

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, blending until just combined. If desired, fold in any optional extras.
  6. Use a cookie scoop or tablespoon to drop rounded balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden and the center is set. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For even softer cookies, chill the dough for about 30 minutes before baking. Store cookies in an airtight container at room temperature for up to a week.
