Ingredients

  • Fresh or canned salmon (14-16 oz)
  • Bread crumbs (1 cup)
  • Onion (1 small, finely chopped)
  • Egg (1 large)
  • Mayonnaise (2 tablespoons)
  • Mustard (1 tablespoon)
  • Salt and pepper (to taste)
  • Cooking oil (for frying)

Instructions

  1. If using fresh salmon, cook until flaky, cool, and remove skin/bones. If using canned salmon, drain well.
  2. In a large bowl, combine the salmon, bread crumbs, chopped onion, egg, mayonnaise, mustard, salt, and pepper. Mix until well combined.
  3. Shape the mixture into small patties, about 2-3 inches in diameter (about 8-10 patties).
  4. Heat about 1/4 inch of oil in a large skillet over medium heat.
  5. Carefully place the patties in the hot oil and cook for about 4-5 minutes on each side until golden brown. Cook in batches if necessary.
  6. Remove patties from the skillet and place on paper towels to drain excess oil.
  7. Serve hot with your favorite dipping sauces or sides!

Notes

Consider adding cayenne pepper for a spicy kick. Store leftovers in an airtight container and refrigerate for up to 3 days.
