Ingredients

  • 1 cup pecans
  • 1 pre-made pie crust
  • 1/2 cup brown sugar
  • 1/4 cup corn syrup
  • 2 large eggs
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your muffin tin with cooking spray or butter.
  3. In a skillet over medium heat, lightly toast the pecans for about 5 minutes until fragrant.
  4. In a bowl, whisk together the brown sugar, corn syrup, eggs, and vanilla until well combined.
  5. Cut the pie crust into small circles and press into the muffin tin.
  6. Sprinkle toasted pecans into each crust and pour the filling over until about 2/3 full.
  7. Bake for 15-20 minutes, until edges are golden and filling is set.
  8. Let cool for 10 minutes before removing from tin. Serve warm or at room temperature.

Notes

Pair with vanilla ice cream or drizzle with caramel sauce for added decadence.
