  • 1 cup light brown sugar
  • 1/2 cup corn syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 batch pie crust or pre-made pastry dough

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a standard muffin tin with butter or non-stick spray.
  3. In a mixing bowl, whisk together brown sugar, corn syrup, eggs, vanilla, and salt until smooth.
  4. Fold in the chopped pecans evenly.
  5. Roll out the dough to 1/8 inch thick and cut out circles to fit into the muffin cups.
  6. Pour the pecan mixture into each lined muffin cup, filling them about 3/4 full.
  7. Bake for 20-25 minutes until the filling is set and the edges are lightly golden.
  8. Let them cool before removing from the tin.
