Ingredients

  • 3 large sweet potatoes (peeled and diced)
  • 1/2 cup brown sugar (light or dark works)
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs (beaten)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup mini marshmallows (optional)
  • 1 cup pecans (chopped, optional topping)

Instructions

  1. In a large pot, bring water to a boil and add the diced sweet potatoes. Cook for about 15-20 minutes until tender. Drain and let cool slightly.
  2. Add the cooked sweet potatoes to a large mixing bowl and mash until smooth.
  3. Stir in the brown sugar, melted butter, beaten eggs, vanilla extract, cinnamon, and salt until well combined.
  4. Pour the sweet potato mixture into the greased slow cooker.
  5. If using, sprinkle the mini marshmallows or chopped pecans on top.
  6. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until heated through and fluffy.
  7. Once cooked, give it a gentle stir before serving, and enjoy!

Notes

Store leftovers in an airtight container for up to 5 days. You can also freeze it for up to 3 months.
