Ingredients

  • 2 cups sushi rice
  • 1 lb fresh salmon, cubed
  • 1 cup mayonnaise
  • 23 tablespoons Sriracha sauce
  • 1 tablespoon soy sauce
  • 1 sheet nori (seaweed)
  • 1 avocado, sliced
  • Green onions, for garnish

Instructions

  1. Rinse the sushi rice under cold water until clear and cook according to package instructions. Let cool slightly.
  2. In a bowl, mix mayonnaise, Sriracha, and soy sauce. Taste and adjust spiciness.
  3. Gently fold cubed salmon into the spicy mayo mixture.
  4. In a greased baking dish, spread the cooked sushi rice evenly. Layer with the spicy salmon mixture.
  5. Preheat oven to 375°F (190°C) and bake uncovered for 20-25 minutes, until the top is golden and bubbly.
  6. Let cool slightly, sprinkle with nori strips, avocado, and green onions before serving.
  7. Scoop out portions and enjoy warm, paired with soy sauce or pickled ginger.
