Ingredients

  • 1 cup cornmeal
  • 2 cups milk
  • 2 eggs
  • 1/4 cup butter, melted
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. Grease your slow cooker insert with cooking spray or butter.
  2. In a large bowl, whisk together the cornmeal, baking powder, and salt.
  3. In another bowl, mix the milk, eggs, and melted butter until well combined.
  4. Pour the wet mixture into the dry ingredients. Stir until just combined (don’t overmix!).
  5. Pour the combined mixture into the slow cooker. Set on low and cook for about 4 hours or until the center is set and a toothpick comes out clean.
  6. Allow to cool slightly before serving. It’s best enjoyed warm!
