Ingredients

  • 2 medium yellow squash, sliced thinly
  • 2 medium zucchini
  • 1 cup ricotta cheese
  • 1 cup shredded cheddar cheese
  • 1 egg
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced squash and zucchini, cooking for about 5 minutes until they’re slightly softened. Season with salt, pepper, and garlic powder.
  2. In a bowl, combine the ricotta cheese, egg, and half of the shredded cheddar. Mix well until smooth.
  3. In a large mixing bowl, combine the sautéed squash with the ricotta mixture and stir until evenly mixed.
  4. Pour half of the squash mixture into the slow cooker. Sprinkle half of the breadcrumbs on top. Add the remaining squash mixture and finish with the rest of the breadcrumbs and shredded cheddar.
  5. Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, until the casserole is hot and bubbly.
  6. Let it sit for a few minutes before serving for the best texture.
