Ingredients

Scale
  • 1 lb steak (flank or sirloin)
  • 1 cup white rice
  • 16 oz queso cheese sauce
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 2 tablespoons olive oil
  • Spices (chili powder, cumin, salt, pepper)

Instructions

  1. Trim excess fat from the steak and cut it into bite-sized cubes. Marinate with chili powder, cumin, salt, and pepper.
  2. In a medium saucepan, bring 2 cups of water to a boil. Stir in the rice, cover, and simmer for 15-20 minutes.
  3. In a large skillet over medium heat, add olive oil and sauté onion and bell peppers for 5-7 minutes.
  4. Add the marinated steak to the skillet and sear for 3-5 minutes until browned.
  5. Stir in the cooked rice and queso cheese sauce and mix until everything is heated through for 3-4 minutes.
  6. Serve garnished with fresh cilantro, diced tomatoes, or jalapeños.

Notes

Customize with beans or veggies as desired. Store leftovers in an airtight container for up to 4 days.
