  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs

  • ½ teaspoon salt
  • 1 cup fresh strawberries, diced
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the softened butter and cream cheese until smooth and creamy.
  3. Gradually mix in granulated sugar, brown sugar, and vanilla extract until fully incorporated.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture until just combined.
  6. Gently fold in the diced strawberries, being careful not to overmix.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 12-15 minutes, until the edges are lightly golden. Let them cool for a few minutes on the pan before transferring to a wire rack.

Notes
