Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 12 oz chocolate chips (milk or dark)

Instructions

  1. In a bowl, combine the crushed graham crackers, sugar, and melted butter. Mix until well combined and crumbly.
  2. Press the mixture firmly into the bottom of muffin tins to form small cups. Chill in the fridge for about 15 minutes to set the crust.
  3. In a second bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until creamy and smooth.
  4. Gently fold in the chopped strawberries, ensuring even distribution while retaining their shape.
  5. Remove crusts from the refrigerator, and spoon the cheesecake mixture into each crust, smoothing the tops.
  6. Chill for another hour until the filling is firm.
  7. Melt chocolate chips in a microwave-safe bowl in increments of 30 seconds until smooth, stirring between increments.
  8. Dip each cheesecake-filled cup into the melted chocolate, ensuring an even coat. Place them back in the muffin tins and chill again until the chocolate has set.

Notes

Serve chilled, optionally with whipped cream or strawberry sauce for enhanced flavor.
