Ingredients

Scale
  • 2 cups strawberries (fresh or frozen)
  • 2 tablespoons gelatin
  • 2 tablespoons honey or maple syrup
  • 1/2 cup water
  • Juice of 1/2 lemon

Instructions

  1. Wash and hull 2 cups of strawberries and puree them until smooth.
  2. Sprinkle 2 tablespoons of gelatin over 1/2 cup of cold water and let it sit for 5 minutes to bloom.
  3. In a saucepan, combine strawberry puree, 2 tablespoons of honey or maple syrup, and the juice of half a lemon over low heat. Stir until heated through (3-4 minutes).
  4. Remove from heat and add the gelatin mixture, stirring until dissolved.
  5. Pour the mixture into silicone molds or a lined baking dish.
  6. Refrigerate for 2-3 hours until fully set, until firm to the touch.
  7. Carefully remove the gummies from the molds and store in an airtight container in the fridge for up to a week.

Notes

For a vegan option, substitute gelatin with agar-agar. Customize flavors by using different fruits.
