Ingredients

  • 12 large pasta shells
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 jar (about 24 oz) marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Boil pasta shells according to package instructions until al dente. Drain and set aside.
  2. In a mixing bowl, combine ricotta, mozzarella, spinach, Parmesan, Italian seasoning, salt, and pepper.
  3. Using a spoon, carefully fill each pasta shell with the cheese mixture.
  4. Spread a thin layer of marinara sauce on the bottom of the slow cooker. Place stuffed shells in a single layer, then top with remaining marinara sauce.
  5. Cover and cook on low for 3-4 hours or high for 2 hours until bubbly and heated through.
  6. Once done, sprinkle with additional mozzarella before serving, if desired.

Notes

Great for making ahead of time; store leftovers in an airtight container for up to 3 days. Can be frozen uncooked.
