  • 1 can (15 oz) black beans, drained and rinsed
  • 2 eggs
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup coconut oil or unsweetened applesauce
  • 1/2 cup sugar-free sweetener (like erythritol or stevia)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • A pinch of salt
  • Optional: 1/2 cup sugar-free chocolate chips or nuts for mix-ins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine the black beans, eggs, cocoa powder, coconut oil or applesauce, sweetener, vanilla extract, baking powder, and salt. Blend until smooth and creamy.
  3. If you’re using chocolate chips or nuts, stir them gently into the batter.
  4. Grease an 8×8 inch baking pan or line it with parchment paper for easy removal.
  5. Pour the batter into the prepared pan, smoothing out the top. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
