Ingredients

  • 1 cup rolled oats
  • 1 cup pitted dates, chopped
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the rolled oats, ground ginger, baking soda, and salt. Mix well.
  3. In another bowl, mash the chopped dates with a fork until smooth. Stir in the melted coconut oil, applesauce, and vanilla extract.
  4. Add the wet mixture to the dry ingredients and mix until just combined.
  5. Using a spoon or cookie scoop, portion out the mixture onto the prepared baking sheet, flattening them slightly.
  6. Bake for 10-12 minutes or until the edges are lightly golden. Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.
