Ingredients

Scale
  • ½ cup dark chocolate (sugar-free, chopped)
  • 2 tablespoons butter (or coconut oil)
  • 1 large egg
  • 2 tablespoons sugar substitute (erythritol or stevia)
  • 1 tablespoon cocoa powder (unsweetened)
  • 1 tablespoon flour (or almond flour)
  • Pinch of salt
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Slow Cooker: Line the bottom of a small baking dish that fits in your slow cooker with parchment paper.
  2. Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate and butter. Heat in the microwave in 30-second intervals until melted and smooth. Stir well.
  3. Combine Ingredients: In a separate bowl, whisk together the egg, sugar substitute, cocoa powder, flour, salt, and vanilla extract until smooth. Pour in the melted chocolate and stir until fully combined.
  4. Pour into Dish: Transfer the batter into the prepared baking dish, filling it halfway to allow space for rising.
  5. Cook: Place the baking dish in the slow cooker. Cover the slow cooker with a clean kitchen towel and put the lid on. Cook on high for 1 hour.
  6. Check for Doneness: The edges should be set, but the center will still be soft. Turn off the slow cooker and allow the cakes to cool for a few minutes.
  7. Serve: Carefully run a knife around the edges and invert onto plates. Serve warm for that delightful molten effect!

Notes

Best enjoyed warm. You can add spices or flavorings for a personal touch.
