Ingredients

  • 4 slices of your favorite bread (sourdough or whole wheat)
  • ½ cup sun-dried tomatoes, chopped (oil-packed)
  • 1 cup fresh spinach
  • 1 cup ricotta cheese (or substitute with cream cheese or goat cheese)
  • ½ cup mozzarella cheese, shredded
  • Olive oil or butter for grilling
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the chopped sun-dried tomatoes, fresh spinach, and ricotta cheese. Season with salt and pepper.
  2. Spread the filling evenly on two slices of bread. Top with mozzarella cheese and cover with the remaining slices of bread.
  3. In a skillet over medium heat, add a little olive oil or butter.
  4. Place the sandwiches in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  5. Check the cheese melt; ensure it’s gooey (you can cover the skillet for an extra minute if needed).
  6. Slice in half and enjoy immediately, while the cheese is still ooey-gooey!

Notes

Try different breads or add crushed red pepper flakes for a spicy kick. Store leftovers in an airtight container in the fridge for up to 2 days.
