Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk (or regular milk + 1 tsp lemon juice/vinegar)
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mix the melted butter, granulated sugar, and brown sugar until well combined.
  3. Add the eggs and vanilla extract, stirring until smooth. Then mix in the buttermilk.
  4. Combine the flour, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  6. Fold in the chopped pecans gently until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes, or until a toothpick comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For added texture, reserve some pecans to sprinkle on top before baking. Allow the bread to cool before slicing for clean cuts.
