Ingredients

  • 4 large sweet potatoes, peeled and cubed (about 2 lbs)
  • 1/2 cup brown sugar (adjust to taste)
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk (or dairy-free alternative)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 teaspoon nutmeg (optional)
  • 2 cups mini marshmallows

Instructions

  1. Place the sweet potatoes in a large pot of boiling water. Cook for about 15-20 minutes or until tender. Drain and let cool slightly.
  2. In a large mixing bowl, mash the sweet potatoes until smooth.
  3. Add brown sugar, melted butter, milk, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes. Mix until everything is well combined.
  4. Pour the sweet potato mixture into a greased 2-quart baking dish (or add to the slow cooker).
  5. Sprinkle mini marshmallows evenly on top of the sweet potato mixture.
  6. Preheat your oven to 350°F (175°C) and bake for 25-30 minutes or until the marshmallows are golden brown and the casserole is heated through.
  7. Enjoy warm, and watch it disappear!

Notes

For a nutty crunch, add chopped pecans or walnuts on top of the marshmallows.
