Ingredients

Scale
  • 2 cups mashed sweet potatoes (about 23 large sweet potatoes)
  • 1 cup sugar (or brown sugar for richer flavor)
  • 1/2 cup milk (regular or plant-based)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 pre-made pie crust (store-bought or homemade)

Instructions

  1. Peel and chop the sweet potatoes. Boil or bake them until tender, then mash until smooth.
  2. In a large bowl, combine the mashed sweet potatoes, sugar, milk, eggs, vanilla extract, spices, and salt. Mix until well-blended.
  3. Line the slow cooker with parchment paper or spray with non-stick cooking spray.
  4. Pour the sweet potato mixture into the pre-made pie crust, ensuring it’s evenly distributed.
  5. Cover and cook on low for 5-6 hours or until the filling is set and a toothpick inserted comes out clean.
  6. Once cooked, remove from the slow cooker and let it cool for about 30 minutes before slicing.
  7. Enjoy your sweet potato pie warm or at room temperature, possibly topped with whipped cream!

Notes

For a dairy-free option, use almond milk or coconut milk. Customize spice levels by adding more cinnamon or a pinch of ginger for a twist.
