Ingredients

  • 12 jumbo pasta shells
  • 1 pound ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Sour cream (optional topping)

Instructions

  1. Cook the pasta shells by bringing a large pot of salted water to a boil and cooking according to package instructions (8-10 minutes). Drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef for about 5-7 minutes, breaking it apart as it cooks.
  3. Stir in the taco seasoning and salsa, cooking for an additional 2-3 minutes.
  4. Stuff each cooked pasta shell with the beef mixture.
  5. Preheat the oven to 350°F (175°C). Spread a layer of salsa at the bottom of a baking dish and arrange the stuffed shells on top. Sprinkle cheese over the shells and cover with foil.
  6. Bake for 20 minutes or until the cheese is melted and bubbly.
  7. Remove from the oven, let it cool slightly, and garnish with sour cream or fresh cilantro.

Notes

Store leftovers in an airtight container for up to three days. Can be frozen before baking for later use.
