Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 2 medium zucchinis, sliced into half-moons
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 packet Tex Mex seasoning
  • 1 cup corn, fresh or frozen
  • Salt and pepper, to taste
  • Fresh cilantro and lime wedges (for serving)

Instructions

  1. Prepare the slow cooker: Spray with non-stick cooking spray or use a liner.
  2. Add the chicken thighs at the bottom of the slow cooker.
  3. Layer the zucchini, black beans, tomatoes, corn, and Tex Mex seasoning on top.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
  6. About 30 minutes before serving, shred the chicken in the slow cooker and stir it into the mixture.
  7. Garnish with fresh cilantro and lime wedges before serving.

Notes

Substitute chicken with turkey or tofu for different protein options. Adjust spice level by adding jalapeños or mild salsa.
