Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 cup canned pumpkin puree
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Grease the bottom of your slow cooker with cooking spray or line it with parchment paper for easy removal.
  2. In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt. Set aside.
  3. In another bowl, mix the granulated sugar, brown sugar, pumpkin puree, oil, eggs, and vanilla extract until well blended.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared slow cooker. Cover and cook on high for about 2-3 hours, or until a toothpick inserted into the center comes out clean.
  6. Once cooked, turn off the slow cooker and let the bars cool for about 30 minutes before removing them.
  7. Cut into squares and serve plain, or with a dollop of whipped cream or cream cheese frosting if desired.

Notes

Add chocolate chips or nuts for variation. To store, keep in an airtight container at room temperature for 3 days or refrigerate for up to a week. Freeze individual portions for easy treats anytime.
