Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup sweetened condensed milk
  • 1/4 cup fresh lime juice
  • Zest of 2 limes
  • 2 large egg yolks
  • 1 cup unsweetened shredded coconut, toasted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together flour and powdered sugar.
  3. Pour in melted butter and stir until just combined. Press the mixture into the bottom of a greased 8×8-inch baking dish.
  4. Bake the crust for about 10-12 minutes until lightly golden, then set aside to cool slightly.
  5. In a separate bowl, whisk together sweetened condensed milk, lime juice, lime zest, and egg yolks until smooth.
  6. Pour the lime filling over the crust and bake for an additional 15-20 minutes until the filling is set.
  7. While the bars are baking, toast the shredded coconut in a dry skillet over low heat until lightly browned.
  8. Once the bars are out of the oven, sprinkle the toasted coconut over the top while still warm.
  9. Allow the bars to cool to room temperature before cutting them into squares and serving.

Notes

For best flavor, use fresh lime juice and store leftovers in an airtight container in the refrigerator.
