Ingredients

  • 1 loaf of bread (ciabatta or baguette)
  • 2 cups diced fresh tomatoes (about 3 medium-sized tomatoes)
  • ½ cup fresh basil, chopped
  • 4 cloves garlic, minced
  • ½ cup olive oil
  • Salt and pepper, to taste
  • Grated Parmesan cheese (optional, for topping)

Instructions

  1. Slice your chosen loaf of bread in half lengthwise.
  2. In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, salt, and pepper. Stir well to combine.
  3. Spread the mixture evenly over the cut sides of the bread.
  4. Place the bread halves in your slow cooker, cut side up, adjusting them to fit if necessary.
  5. Cover and cook on low for about 180 minutes, or until the bread is tender and infused with flavor.
  6. If desired, sprinkle grated Parmesan cheese on top during the last 30 minutes of cooking.
  7. Remove the bread from the slow cooker, slice it, and serve warm!
