Ingredients

  • 1 cup butter
  • 1 cup brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a large mixing bowl and let it cool slightly.
  3. Add the brown sugar to the melted butter and stir until well combined.
  4. Beat in the eggs and vanilla extract until creamy and smooth.
  5. Gradually add the flour to the wet ingredients, mixing just until combined.
  6. Gently fold in the butterscotch chips.
  7. Grease a 9×13-inch baking pan and pour the batter, spreading it evenly.
  8. Bake for about 25 minutes, or until the edges are golden brown and a toothpick comes out with a few moist crumbs.
  9. Allow the bars to cool in the pan before cutting into squares.

Notes

Store in an airtight container at room temperature for up to a week. For a lighter version, you can substitute half the butter with applesauce.
