Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup caramel bits
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients.
  5. Gently fold in the chocolate chips to the cookie dough.
  6. In mini muffin pans, scoop about one tablespoon of dough into each cup. Press down with your fingers to create a small indentation.
  7. Bake for 10-12 minutes, then remove from the oven and immediately add caramel bits into the center of each cookie cup. Sprinkle chopped pecans on top, and return to the oven for an additional 2-3 minutes until the caramel is melted.
  8. Let them cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. To enjoy warm, reheat in the microwave for 10-15 seconds.
