Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 ½ tsp baking powder
  • ½ cup milk
  • Pinch of salt
  • 1 cup unsalted butter (softened) for frosting
  • 4 cups powdered sugar
  • 2 tsp vanilla extract for frosting
  • 2–4 tbsp milk for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In another large bowl, cream the softened butter and sugar until light and fluffy (about 3-4 minutes).
  4. Add the eggs one at a time, then stir in the vanilla extract until combined.
  5. Gradually add the dry mixture to the wet mixture, alternating with the milk. Blend until just combined.
  6. Pour the batter into the lined cupcake tin, filling them about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let them cool completely before frosting.
